Banana walnut muffins, Chocolate Oreo Tart

Bonsoir! 
Worked for lunch today and had the urge to bake so much so I decided not to work for dinner hehe! Seriously the simplest recipe is the best recipe, no doubt for that!

Banana walnut muffins

Banana Nut Muffins Recipe

  • Prep time: 15 minutes
  • Cook time: 30 minutes

INGREDIENTS

  • 3 or 4 ripe bananas, smashed
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 Tbsp espresso or strong coffee (optional)
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cup of flour
  • 1 cup chopped walnuts (toasted or raw)

METHOD

No need for a mixer with this recipe.
1 Preheat the oven to 350°F. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.
2 Mix in the sugar, egg, espresso and vanilla.
3 Sprinkle the baking soda and salt over the mixture and mix in.
4 Add the flour, mix until it is just incorporated. Fold in the chopped walnuts.
5 Pour mixture into a prepared muffin tin. Bake for 25-30 minutes. Check for doneness with a toothpick inserted into the center of a muffin. If it comes out clean, it's done. Cool on a rack.
Yield: Makes 12 muffins.

And tadah! Here is my chocolate oreo tart! Decided to make this for Dahye because its her birthday tomorrow! Sad that i'm not working on Wednesday onwards so decided to do it today and bring it to work tomorrow. Hopefully no one eats it pleasee.



{No bake chocolate oreo tart}

Preparación: 20 min (plus two hours in the fridge to set)
Serves: 12

Ingredients

    Oreo crust:
  • 300 g (10 oz) Oreo cookies
  • 1/2 cup butter ( I used 1/4 instead)
  • Chocolate Cream filling:
  • 200ml heavy cream
  • 200g dark chocolate
  • 1/4 cup butter
  • To decorate:
  • about 4 or 5 chopped Oreo cookies
  • chocolate chips

Directions:

  1. To make the crust, using a food processor, blend Oreo cookies until the texture of coarse meal or crumbs. Add the melted butter and blend until well combine. Place the mixture into a 4×14 fluted rectangular tart pan (mine has a removable bottom for easy removal of the finished tart) and press onto the bottom and up the sides evenly. Freeze the crust whilst preparing the chocolate filling
  2. In a medium saucepan, bring cream to the boil. Remove from heat, add chopped chocolate and butter, and let rest for 5 minutes. Then stir until dissolved. Pour chocolate filling over oreo crust, and decorate with some chopped oreo cookies and chocolate chips
  3. Chill for 2 hours at least, preferably overnight. Unmold, serve, and enjoy!
